Persian style kuku made of potatoes , leeks that have been "melted" in heavy cream and butter , zataar , Gruyere cheese , fresh leeks , salt , white pepper and eggs. It's topped with burnt onion & date molasses labneh and crispy leeks. On the side is hot smoked salmon that's been cured and smoked with maple flakes , brown sugar , Aleppo and Urfa chili.
